Meet the faces behind the wine

Bodegas Canopy is located in the town of Camarena, 40 kilometers from Toledo and 70 from Madrid. This makes it a comfortable winery to visit in Toledo and near Madrid.

It is a young winery dedicated to the rediscovery of the historic terroir of Méntrida. In 2004 Belarmino Fernández and Alfonso Chacón, two friends oenologists, professionals from the world of wine, business and hospitality decided to unite their passion in this viticultural project that revives the quality of wine in Méntrida.

The journey of Bodegas Canopy began in November 2003, when its managers began the search for vineyards on which to base the project. The three partners were looking for old Grenache vines and modern Syrah plantations to think about the wines from the vineyard, practicing organic viticulture and respecting the grape to the maximum. The objective was none other than to make wines like the ones they liked to drink. Finally, it was in Méntrida that they found an old vineyard that suited their needs.

ONE LAND, TWO FRIENDS, ONE PASSION

The wine

The wines from Bodegas Canopy are unique wines, both for the extreme care of the vineyard, for the peculiarity of the plots, and for the special way of making and raising them.

In 2018, Bodegas Canopy launches Ganadero, a fresh and fun red, 100% Garnacha, with a complex palate and at the same time easy to drink. His incessant search for interesting vineyards that give a differentiating character to his wines has given rise to this young red. A monovarietal aged for three months in French oak barrels that arises from undulating terrain, formed by sandy soils. A wine with personality and a powerful image focused on the international market.

Wine Personality Test

We have asked them their vision of wine and they have answered the personality questionnaire, in which the wine is portrayed to perfection:

1. If wine were a famous / fictional character, what would it be? Why?

The ideal character for Red Ganadero is Bruce Springteen, because he makes you want to dance and live like Bruce's music.

2. What if it were an animal? Why?

The animal that best represents our Tinto Rancher is the Bull, because it represents the strength and character of Spanish wine.

3. The reason for the label and the name.

With this label we claim the beauty of the Bull with a fun aspect.

4. Your match. What would be your perfect companion?

The perfect match for Ganadero Tinto would be a meeting with friends

5. Is it more beach or more mountain? Why?

Our Ganadero Tinto is more of the mountain for its powerful character and its aromas of the countryside.

Match your moment

What better than a traditional Toledo recipe such as Carcamusas, to accompany Ganadero tinto ¡¡pork meat stew with tomato and its spicy touch.

Ingredients

1 kg. lean pork
200 gr, chorizo
200 gr. of ham
1 onion
A little chilli
2 cloves of garlic
Fried tomato
Green peas
1 glass of white wine
Olive oil and salt

Elaboration

In a saucepan add a little oil, chilli and fry a little.

With the strong oil the meat is browned, sealing it. The meat should be toasted on the outside and a little raw on the inside. It is seasoned. This step is important to be done over high heat, so that the meat does not come to a boil and remains tough. The meat is set aside.

Pour a little oil, in that same pan, to brown a minced garlic and onion. The meat is then added again and the whole thing is covered with wine. With the high heat, when it starts to boil, leave the heat to a minimum for 15-20 minutes so that the wine is consumed.

Add the chopped chorizo and the ham, sauté a little and then add the peas.

It is time to add the tomato, in abundance, and leave at least another half hour.

In the end, it is convenient to test if the salt and pepper are correct and that's it!

We recommend serving the carcamusas in a clay pot.
