The Wine: Methodic

Wine made with the variety Red Xarel lo from young vine, a variety in the process of recovery in the Penedès. It is a mutation of the white Xarel·lo, from a later harvest, with a thicker skin than white and with a touch of red that makes it very elegant and showy on the plant. Following our line of working with minority varieties, we present the following wine: Taking advantage of the color of this grape and the power of its skin thicker than a white xarel·lo, we dare with the METHÒDIC. We say that the METHÒDIC has taken us outthe most natural part of making winethat we carry inside. It is a wine that has been made in a breezy way, that is, that has fermented for a few days with the grape skins themselves, with the vineyard's own yeasts. In this way we achieve a wine with a specific tannic structure and color, together with a rather premature harvest to seek a completely natural acidity, we have a wine with an incredible life inside the bottle.

Sergi SevillanoYMartí Giraltthey met at the Espiells school of oenology and viticulture, in Sant Sadurní d'Anoia. They both come from two different worlds. Sergi, from Barcelona, ​​is a sommelier and restaurant technician, he had worked in differenthigh-end restaurantsand in some specialized wine stores, and he wanted to go to Mirillas to expand his knowledge of viticulture and oenology.

There he met Martí de Llorenç del Penedès, who has always been surrounded by the world of wine, his father has been making wine in the area for more than 40 years and his grandfather also had a small family cellar, and has accumulated experience in various areas, such as the Penedès or the Priory.

They believed that their union with Martí, dedicated more to the technical part and the elaboration of El ApicalY Sergi, in the administrative and commercial part, it would constitute a good team.
